seeded twists...

- 1 1/4 oz. fresh yeast
- 1 lb. cold water
- 3.12 lbs. all purpose flour
- 5 ts. salt
Seed Mixture
- 1/3 cup white sesame seeds
- 1 1/2 tbs. poppy seeds
- 3 tbs. black sesame seeds
- 1 tbs. anise seeds
1. Dissolve yeast in water.
2. Add flour, blend on low speed until "take up".
3. Increase to medium speed, continue to knead for 4 minutes. Autolyse for 15 minutes.
4. On medium speed, incorporate salt and knead for 4 minutes.
5. Frement dough for 1 hour.
6. Pat dough into 12"x12". Mist dough lightly with water. Coat top of dough with half of the seed mixture.
7. Fold the dough into thirds. Pat out to even thickness (about 6"x12").
8. Use remaining seed mixture to cover the top and bottom of the dough.
9. Retard for 30 minutes.
10. Brush top of dough with olive oil and sprinkle with salt.
11. Line a sheet tray with parchment and lightly brush with oil.
12. Cut dough into 1 1/4" strips, twist each strip to 8" long.
13. Arrange twists on tray, about 1/2" apart.
14. Proof until almost doubled.
15. Bake at 375 degree F with steam for 4 minutes. continue baking for 20 minutes more. The temperature inside the bread should be around 180-190 degree F.
