bread pudding...

This bread pudding is made from panettone that left over. I simple cut the bread into big chunks, lay them down on a baking pan, then add a custard base and shredded coconut. Bake in a water bath at 325 degree F for 1 hour. Let it cool down for 30 minutes, cover with plastic wrap and cool it in the refrigerator overnight. I serve it with mango-cocunut ice cream and decorate with vanilla tuile.
for the custard base
- 1 1/2 cups half & half
- 1 cup sugar
- 1/2 ts. salt
- 3 eggs
- 1 tb. vanilla extract
- 1/4 cup malibu rum (optional)

I love to make French toast with leftover panettone. Why did I never think of bread pudding? It's just a big bowl of comfort and joy (though yours looks particularly chic). :)
