dessert sushi...

I was planning to make dessert sushi after visited Mark of No Special Effects last week. I wanted to use sushi rice with mango and coconut as a filling, but I've made a lot of desserts with these fruits already. Then I went to say hi to Pim and saw this Thai dessert "Kao Niew Durian". I suddenly came up with an idea for my dessert sushi.

This morning, Mark and I went surfing at Linda Mar Beach, Pacifica. There were ton of people on the beach and in the water as the weather was very hot today. We might go windsurfing tomorrow if the wind will be enough. By the way, we saw a grey whale came up spouting in front of us while we were windsurfing at Crissy Field last Tuesday. I was so excited and scared at the same time. Imagine, 25 feet away from the whale. It was HUGE!

Anyway, we went to buy produce and the fruit "frozen durian" at Ranch99 after that. I myself never had a frozen durian until today. It tasted fine when it was still frozen, but tasted yucky after I let it sit at room temperature for 10 minutes. I agree with Pim that the frozen ones only good for Kao Niew Durian.

for the durian with coconut milk
- 1 cup frozen durian, shredded
- 1 cup coconut milk
- 1/3 cup palm sugar
- 1/2 ts. salt

for the sweet sticky rice

for the durian with coconut milk
1. Bring the coconut milk, palm sugar and salt to a boil.
2. Add durian, simmer for 5 minutes.
3. Remove from the heat.

1. Spread the sweet sticky rice on the bamboo mat.
2. Place the durian over, reserve the sauce for dipping.
3. Roll and cut.

Thanks for the shout-out Thip! I can't imagine being that close to a whale, ever!
I haven't tasted durian in a looong while. Sorry the frozen one didn't work out, though :(
I see there's a bluish cast to the photos-- you might like to try some of the different color balance modes on your camera to correct it :)

I've heard of sweet sushi but have never had a chance to try one .. this really makes me want to make some at home!

Mark, it's ok--I used the frozen one for dessert. I'll have a fresh one soon in BKK. :)

Hi Thip,

When I make the sticky sweet rice, do I add the coconut mixture into the rice...let it sit for 30 minutes...and then use that to make the durian sushi or do I just make stick rice in the rice cooker and use it plain like that with the durian...? I can't wait to do this...oh..by the way do you know if I can make it a day ahead ? Will the rice get hard? probably huh...

You can make it a day ahead, but make sure your sweet sticky rice is not too soft, otherwise, it's hard to roll.

I add coconut milk mixture to the sticky rice and let it set before rolling with durian inside.
