shrimp paste fried rice...

This is one of my favorite dishes that I don't make it often. It's not difficult to make, but it takes time for preparation. Although Mark loves Thai food and eat more spicy than me, he can't stand the smell of shrimp paste. So I don't feel like taking a long time of cooking and nobody joins me.1

Shrimp paste or Kapi in Thai is made from fermented ground shrimp. It is common used in Thai cuisine. I realized that most of my foreigner friends don't like its smell. However, it depends on how you cook it and how much you use it. For this dish, I use a lot of shrimp paste as my family and I love a strong flavor dish. I also use chicken instead of pork. On the side, I have fried egg, acacia pennata, green mango, chili, shallot, long green bean and lime.
Here's the ingredients:
make for 4
for shrimp paste fried rice
- 2 cups cooked jasmine rice
- 1 tb. vegetable oil
- 3 clove garlics, chopped
- 1 tb. shrimp paste
- 1 tb. vegetable oil
- 1/4 cup dried shrimp
- 1 tb. palm sugar
- 1 tb. fish sauce
- 3 fresh bird's eye chilies, chopped
- 3 lime juice1

for sweet shallot chicken
- 1/2 lb. chicken, sliced
- 2 tb. vegetable oil
- 1/4 cup shallot, thinly sliced
- 2 cilantro roots, chopped
- 2 tb. palm sugar
- 1 tb. fish sauce
- 1 tb. oyster sauce
- 1 tb. soy sauce
- 1/4 ts. white pepper
for fried egg
- 3 eggs
- 1 ts. fish sauce
- 1/4 white pepper
for shrimp paste fried rice
1. Heat the oil with garlic on medium heat. Stir in cooked rice, shrimp paste and fish sauce. Mix them well and set aside.
2. Heat the oil with dried shrimp. Stir in palm sugar, fish sauce and chilies. Mix until palm sugar is dissolved.
3. Stir in shrimp paste cooked rice and lime juice. Mix them well.1

for sweet shallot chicken
1. Heat the oil with shallot on medium heat.
2. Stir in chicken, palm sugar, cilantro root, fish sauce, oyster sauce, soy sauce and white pepper.
3. Cook until the chicken is done.1

for fried egg
1. Mix egg, fish sauce and white pepper together in a bowl.
2. Heat the oil on medium heat, add the egg mixture. Tilt the pan with a circular motion so that it coats the surface evenly.
3. Cook for about 2 minutes, until the bottom is light brown. Loosen a spatula, turn and cook the other side.1

1. Put the shrimp paste fried rice in a small bowl and press it tightly, then release it on the plate.
2. Cut the fried egg into long strips and place around the rice.
3. Place the sweet shallot chicken along, then the rest of vegetable and herb you want.

hehehe I have never made this here because my husband does not like the smell and I do not like to make and eat it alone!!!

This makes me want to be there now ka.
