This Thai style dessert is the benefit from our pumpkin carving post. I use some meat from the top and inside the pumpkins. It's a quick recipe that takes only about 15 minutes. Happy Halloween Day!
- 1 cups pumpkin meat
- 3/4 cup coconut milk
- 1/4 cup palm sugar
- 1/8 ts. salt
1. Bring coconut milk and pumpkin meat to a boil on medium heat.
2. Add palm sugar and salt, let it comes to a boil.
3. Lower the heat, simmer for 7-10 minutes.
