in coconut milk...

This Thai style dessert is the benefit from our pumpkin carving post. I use some meat from the top and inside the pumpkins. It's a quick recipe that takes only about 15 minutes. Happy Halloween Day!
- 1 cups pumpkin meat
- 3/4 cup coconut milk
- 1/4 cup palm sugar
- 1/8 ts. salt
1. Bring coconut milk and pumpkin meat to a boil on medium heat.
2. Add palm sugar and salt, let it comes to a boil.
3. Lower the heat, simmer for 7-10 minutes.

This is a lovely dessert served slightly warm. Malaysia has something similar which we call "bubur cacar" and is made with a mixture of sweet potato and yam.

By the way congrats on your DMBLGIT Oct award.

I miss that... coz it reminds me of my dad who love pumpkin custard and my mom love pumpkin in coconut soup.

Sometime, I sub it with butternut Squash when can't find good pumpkin.

In the past, I did this version of dessert as ice cream. I think pumpkin and coconut milk are the best inseperable combo...like me and Pookie:)...don't you think? lol
