Because of my curiosity, I make green curry ice-cream today. Although it's odd, the taste is fine for me. However, I wouldn't serve this to anyone, unless they really want to try it. There's something weired about it. It might be the smell of the curry or the spicy taste of the flavor. I haven't figure it out yet.
Here's the recipe.
- 1 tb. green curry paste
- 1 cup heavy cream
- 1/2 cup milk
- 1/2 cup sugar
- 3 egg yolks
- pinch of salt
1. Bring cream and curry paste to a scald.
2. Whisk the yolks with sugar, then temper the yolk mixture with the hot cream.
3. Return the custard to the heat, bring to 170 degrees F. Remove from the heat.
4. Strain over the milk, add salt and let cool over an ice-bath.
