waffles made with yeast...

Crispy and chewy in one bite, this is the way I like to eat waffle. Just like making bread, these waffles will take sometimes for the preparation as the dough needs to rest and raise. Did I say the dough? Yes, not the batter. If you know the difference between these two, you know what I'm talking about.
for the sponge
- 1/4 cup all purpose flour
- 1/8 ts. baking powder
- 1/2 ts. sugar
- 1/4 cup + 1 tb. water, luck warm
- 1 ts. active dry yeast
for the dough
- 1 cup whole grain pastry flour
- 1 tb. dry milk powder
- 1/2 egg
- 2 tb. water
- 1 1/2 tb. sugar
- 1/2 ts. salt
- 1 tb. shortening
1. To make a sponge; activate yeast with warm water in a bowl, let it sit for 5 minutes. Sift all dry ingredients together, then add into the bowl and mix by hand until smooth. Cover and ferment at room temperature for 15 minutes.
2. To make a dough; mix together all dry ingredients in a mixer. Add water and egg, then sponge and mix until smooth. Add shortening and mix well.
3. Roll into a ball and place in greased bowl. Cover and ferment at room temperature for an hour.
4. Divide the dough into the desired sizes, roll into balls and cover loosely with plastic wrap. Proof until double in size.
5. Roll each ball in raw sugar and raisins, place onto the preheated waffle iron and cook until browned.

You finally did it hee hee ^u^, i remembered last time you visited BKK and we were talking about this type of waffle. I said that it look just like a dough. And so it does eh 555.

Though it was a fun, novel way to make waffles (family didn't know what I was preparing), I prefer the taste and texture of traditional. I love your stuff, you laborous foodie!
