two ways to enjoy red curry...

Curry paste is my primary ingredient that I need to have in my kitchen. There are many kinds of curry paste in the market, but I prefer green curry, masman curry and red curry. The way to prepare these curries are very simple and basic as show below. Once you learn the basic, you can give some twist by changing or adding some ingredients. For example, instead of having curry with rice on the side, I added rice directly into the curry and stir them together. You could add spaghetti or pasta too.

Ingredients :

- 1/2 lb. ground chicken or chicken strip
- 2 tbsp. red curry paste
- 1 cup coconut milk
- 1/2 cup pineapple chunk
- 2 kaffir lime leaves, split
- 1/4 cup sliced pepper
- 1 ts. fish sauce
- 1 tbs. palm sugar
- 1/4 cup Thai basil leaves
- 1 1/2 cups of cooked jasmine rice

Procedure :

1. Saute the paste with 1/2 cup of coconut milk over medium heat until fragrant.
2. Add chicken, pineapple, pepper and kaffir lime leaves, continue cooking until the chicken is almost done.
3. Add the remaining coconut milk, palm sugar and fish sauce. Bring to a boil.
4. Add the basil, stir and remove from the heat.
Note : For the fried-rice, add rice, vegetable and basil. Stir until all ingredients are incorporated, then remove from the heat. You might need to add more fish sauce and palm sugar.

I would never thought to stir fried rice with red curry paste. Such a good idea ka!!!

คิดถึง ๆ แกงบ้านเรามาก ๆ เลยค่ะพี่ทิพย์ อุ้มชอบแกงทั้ง 3 แบบเลยค่ะ ไม่ว่าจะแกงแดง แกงเีขียวหวาน หรือมัสมั่น
