flourless chocolate cake...

The February 2009 challenge is hosted by Wendy of WMPE's Blog and Dharm of Dad-Baker & Chef. We have chosen a Chocolate Valentino cake by Chef Wan; a Vanilla Ice Cream recipe from Dharm and a Vanilla Ice Cream recipe from Wendy as the challenge.

The recipe calls for semisweet chocolate, but I used bittersweet chocolate and add some sugar. I also added a hint of cinnamon. It's the way I like to eat chocolate dessert.

Ingredients:

- 227 g bittersweet chocolate, chopped
- 73 g unsalted butter
- 3 egg yolks
- 3 egg whites
- 125 g sugar
- pinch of cinnamon

Procedure:

1. Melt chocolate and butter over bain-marie.
2. Beat egg yolks with 100 g. of sugar to ribbon stage.
3. Prepare French meringue with egg whites and the remaining sugar to firm peaks.
4. Whisk yolk mixture into chocolate mixture.
5. Fold 25% meringue into the mixture.
6. Fold in the rest of meringue.
7. Pour into prepared molds.
8. Bake at 375 degrees F for 20-25 minutes.
