pistachio-chocolate souffles...


From what I learned, there are three ways to prepare souffle. Pastry cream base souffle, roux base souffle and flourless souffle. Most of the time, I prepare souffle with pastry cream.
These souffles are made from Sicilian pistachio-orange pastry cream, bittersweet chocolate and French meringue. All I can say is an awesome combination. Sicilian pistachios definitely have stronger taste than other pistachios. It's hard to find them in your local supermarket, but you can buy them online.

Ingredients:
4 servings (5.5 oz ramekins)

for the pastry cream
- 250 g milk
- 100 g Sicilian pistachios
- 1 orange zest
- 60 g sugar
- 3 egg yolks
- pinch of salt
- 20 g all-purpose flour
- 15 g unsalted butter

for the souffle
- 150 g pistachio-orange pastry cream
- 40 g orange liqueur
- 4 egg whites, room temperature
- 60 g sugar
- 30 g bittersweet chocolate, chopped

Procedures:

for the pastry cream
1. Blend milk and pistachios together in a blender, add orange zest and bring to a boil.
2. Remove from the heat and infuse for an hour.
3. Strain and discard the solids.
4. Bring pistachio milk and two-third of the sugar to a simmer.
5. Whisk yolks, salt and the remaining sugar together.
6. Add flour to the yolk mixture. Mix until smooth.
7. Temper the yolk mixture with hot pistachio milk.
8. Return the custard to a boil over very gentle heat while whisking rapidly.
9. Cook for a minute, transfer to a bowl.
10. Whisk in butter and cover immediately.

for the souffle
1. Prepare 4 ramekins with butter and sugar.
2. Preheat the oven to 375 degrees F.
3. Blend together pastry cream and orange liqueur.
4. Prepare French meringue with egg whites and sugar to firm peak.
5. Fold in 25% meringue to the pastry cream base to incorporate it.
6. Fold in the remaining meringue.
7. Scatter in the chopped chocolate.
8. Pour the mixture into the prepared ramekins, smooth the surface with the offset and cleaning the edge with your thumb.
9. Bake for 10-12 minutes.
10. Garnish with powdered sugar. Serve immediately.
