If you like a super-moist coffee cake, here's the one.

Ingredients:

- 3/4 cup almond flour
- 1/4 cup all purpose flour
- 1/3 cup unsweetened cocoa powder
- 3/4 ts. baking soda
- 1/2 ts. salt
- 3/4 cup unsalted butter, room temperature
- 1 cup light brown sugar
- 2 eggs
- 1/2 cup buttermilk
- 1/3 cup brewed espresso
- 6 pieces See's toffee-ettes, chopped
Preparation:
- 3/4 cup almond flour

- 1/2 cup buttermilk

Preparation:
1. Preheat the oven to 325 degrees F and grease the molds.
2. Sift all dry ingredients together.
3. Cream butter and sugar together in a mixer until creamy.
4. Add eggs, one at a time.
5. Add flour mixture alternately with buttermilk.
6. Add espresso, beat until smooth.
7. Bake for 25-30 minutes.
8. Cool cakes in molds for 10 minutes, then unmold.

It does look very moist. I really like the salt sprinkles on top, chocolate and sprinkles go hand in hand!
