
I made Black Sesame French Macaroons with red bean ganache last year. This year I wanted them to taste really sesame, so I filled them up with black sesame ganache.
Ingredients:
for the shell
- 40 g ground almond
- 27 g ground sesame
- 67 g powdered sugar
- 50 g aged egg white
- 67 g sugar
- 16 g water
for the black sesame paste
- 80 g roasted black sesame
- 25 g sugar
- 10 g water
for the filling
- 50 g heavy cream
- 100 g black sesame paste
- 100 g white chocolate
- 20 g unsalted butter
Preparations:

1. Bring sugar and water to a boil.
2. Blend together black sesame and syrup in a blender under smooth.

these are beautiful as always. My best friend was just actually asking if a black sesame ganache can be made and poof there you are posting it! :) I was wondering..i'm a novice so, how would i get "aged egg whites"? thank you for sharing your recipes.

Anonymous, you can make a ganache from different ingredients, for example, I just made black truffle-dark chocolate ganache.
p.s. aged egg whites are the egg white that have been at room temperature for a day.

hi there! love your macarons blog, i followed this recipe today and post it in my blog, i hope that's ok..thank you for inspiring me and i actually did two batch, one with italian method (one that ive been using) and french method (i seem to fail each time) and the french ones turned out pretty okay but still too fragile and burnt faster. Have u always used the italian method? anyway thank you again for the beautiful photos and great recipes!!!
