homemade granola...

with coconut-pandan panna cotta...


My favorite granola is very expensive these days, since I have all ingredients already so why not make it myself. It only takes 20 minutes.

Ingredients:

for the granola
- 90 g rolled oats
- 80 g flake sweetened coconut
- 10 g sunflower seeds
- 10 g pecan chips
- 10 g slivered almonds
- 5 g ground cinnamon
- 2 g salt
- 25 g brown sugar
- 30 g maple syrup
- 40 g honey
- 20 g oil
- 5 g vanilla extract
- 10 g dried cherries

for the panna cotta
- 100 g coconut milk
- 100 g heavy cream
- 50 g soy milk
- 50 g sugar
- 5 g pandan extract

Preparations:
for the granola
1. Mix all dry ingredients together in a bowl, except dried cherries.
2. Bring sugar, maple syrup, honey and oil to a simmer.
4. Remove from the heat, mix in dry mixture and vanilla extract.
5. Pour the mixture on the silpat, bake at 350 degrees F for 15-20 minutes or until golden brown.
6. Stir in dried cherries, let cool at room temperature.
7. Store in airtight container.

Looks hearty and delicious-- it'll be much harder for me to assemble all the ingredients, though :/

I have never taste this dessert ka P'Thip but after seeing this one...I wanna try ka.
