banana bread...

This moist and delicious classic banana bread is very easy to make. Just make sure you have a full ripe banana in hand, you'll get the best flavor for this one.

make 2 loaves (1/2 lb. size)

- 115 g unsalted butter, room temperature
- 100 g sugar
- 50 g light brown sugar
- 1 egg
- 1 egg yolk
- 2 g vanilla extract
- 1 ripe banana, mashed
- 50 g sour cream
- 150 g all purpose flour
- 3 g baking powder
- 2 g baking soda
- 2 g ground cinnamon
- 1 g salt
- 50 g toasted pecan, chopped


1. Using paddle, cream the butter and both sugar together on medium speed in a mixer until fluffy.
2. Add egg, yolk and extract.
3. Add mashed banana and sour cream.
4. Add dry ingredient and nut.
5. Pour into prepared loaves.
6. Bake at 350 degrees F for 25-30 minutes, until a toothpick inserted in center comes out clean.

Love banana bread, esp. with crunchy sugar on top to go with the crust :) I read bananas can be sped up to overripeness by freezing them in the peel overnight :)
