blueberry financiers...

We just replaced the citrus with huckleberry financier on our dessert menu last week. I'm very happy with the feedback. This week, I'm working on the new one, Fromage Blanc cheesecake. I like to make its more interesting by plating into a glass. This one should be ready to replace next week.
I didn't have huckleberries at home, so I used blueberries instead since they taste similar. I worked with two different recipes and adjusted the ratio of some ingredients to how I like it. Here's the recipe.

- 100 g almond flour
- 70 g all purpose
- 220 g powdered sugar
- 2 g baking powder
- 150 g egg whites
- 200 g brown butter, melted
- 20 g invert sugar
- 10 g amaretto
1. Using a paddle, mix all dry ingredients together in a mixer.
2. Slowly mix in egg whites, then invert sugar.
3. Mix in brown butter, then amaretto.
4. Place into a piping bag and pipe into greased molds, then place some fresh huckleberries in.
5. Bake at 350 degrees F for 10-12 minutes, depending on the size.
6. Cool then down in molds before unmold them.
