Hello, may I ask what the purple liquid seen being poured into the ricotta gnocchi is? I tried to look at the magazine but it seems they only allow for viewing of the most recent magazine, that being issue #12. Thank you!
A violet consomme made from the pigment of dried butterfly pea flowers. These flowers are widely used in Southeast Asia as a natural food colorant and fabric dye.
