and spiced hot chocolate...

I can't get enough of beignets. They taste so good, thin crust outside and puffy/tender inside. If you've never had the pleasure of enjoying the taste and texture of a beignet, here's the recipe that you can make at home. I guarantee you won't disappoint.

This recipe is different from this one. Both are good, but I like this recipe better since it contains potato that make its softer and chewier. You can fill beignets with chocolate sauce or berries sauce and sprinkle with some powdered sugar. I like to sprinkle mine with cinnamon-nutmeg sugar and served with spiced hot chocolate.


for the beignet
- 170 g milled potato, warm
- 75 g milk
- 50 g sugar
- 3.5 g active dry yeast
- 1.5 eggs
- 10 g vanilla extract
- 330 g all purpose flour
- 1 g grated nutmeg
- 7 g salt
- 55 g unsalted butter, softened

for the spiced hot chocolate
- 250 g milk
- 1 g grated nutmeg
- 2 cinnamon sticks
- 2 star anises
- 5 cardamom pods
- 5 cloves
- 2 bay leaf
- 30 g sugar
- 30 g dark chocolate


for the beignet
1. Warm the milk with sugar, place into a mixer with a paddle.
2. Stir in yeast to activate.
3. Add milled potato, then eggs and extract. Mix on low speed.
4. Add flour, nutmeg, salt and butter. Mix on low speed until smooth.
5. Place the dough in greased bowl, cover and proof until double in size.
6. Fold once, then chill overnight.
7. Roll the dough out on a lightly floured surface to 1/2" thickness.
8. Using pizza cutter, cut into 2"x2" squares.
9. Cover and proof until double in size.
10. Heat the oil to 350 degrees, fry the beignets until golden brown on both sides.
11. Remove from the oil and coat with cinnamon-nutmeg sugar.

for the spiced hot chocolate
1. Bring milk and spices to a boil, then infuse for 30 minutes.
2. Strain, add sugar and bring back to a boil.
3. Remove from heat, stir in chocolate.

These look way better than the ones at Cafe DuMond in New Orleans. They taste good when you eat them, but you end up looking like a beignet when you're walking around the French Quarter for the rest of the day -- covered in powdered sugar...
