purple potato gnocchi with pesto sauce...

I had fun making gnocchi--really. :)


for the gnocchi
- 500 g purple potato
- 160 g all purpose flour
- 1 eggs
- 5 g salt

for the gnocchi
1. Wrap each potato with foil and bake at 425 degrees for an hour. Peel the potatoes while still hot and pass through potato ricer.
2. Make a well with the flour on a clean work surface. Place potatoes in center of "flour well", pour eggs, puree and salt on.
3. Gently mix dough until it comes together. It should feel supple and slightly sticky.
4. Roll dough into large cylinder dusting with flour as needed and cut into four equal parts.
5. Roll each part into a log about 1/4 inch in diameter. Cut into little nuggets and repeat.
6. Roll each nugget over gnocchi board.
7. Drop them into boiling, salted water and cook for about 2-3 minutes, or until gnocchi rise to the surface.
8. Serve with pesto sauce and some sliced sun dried tomatoes.

Wow it sounds fab. I love how the gnocchi is such a lovely shade of purple wihtout it looking unnatural.

Yummy! I made purple gnocchi once, too. Very tasty. The sauce looks incredible!
