with coconut foam...
Ingredients:
4 servings
for the tapioca
- 100 g tapioca pearl
- 1250 g water
- 250 g hibiscus juice
- 30 g honey
- 20 g sugar
for the coconut foam
- 50 g coconut milk
- 50 g milk
- 15 g sugar
- 1 g salt
Preparations:
for the tapioca
1. Bring water to a boil, stir in tapioca pearls.
2. Stir occasionally to make sure the pearls are not sticking to each other or to the pot.
3. After the pearls become plump and translucent, turn off the heat.
4. Drain the pearls and rinse with cold water.
5. Bring hibiscus juice, honey and sugar to a boil.
6. Stir in the pearls and cook for 3-5 minutes, then remove from heat.
7. Spoon the pearls into a glass.
for the coconut foam
1. Bring coconut milk, milk, sugar and salt to a boil.
2. Remove from heat, stir in lecithin.
3. Blend the mixture with an immersion blender.
4. Collect the foam and place over the tapioca.
