fish taco...

After a long trip, it feels good to be home. Since I'm not going back to work soon, I have a long list of cooking and baking to experiment. Today, I'd like to start with fish taco and avocado salsa.

Ingredients:
2 servings

- 1/2 lb salmon
- 1 package corn tortillas
- 1/2 lb cherry tomatoes, diced
- 1/2 lb mango, diced
- 1/2 cup shallot, chopped
- 1/4 cup jalapeno, chopped
- 2 garlic cloves, minced
- 1/2 cup cilantro, chopped
- 1/4 cup green onion, chopped
- 1 lime, juiced
- 1/2 tsp kosher salt
- 1/2 tsp sugar
- 1/4 tsp black pepper
- 1/4 tsp dried oregano
- 1/4 tsp ground cumin
- 2 avocados, peeled, pitted and diced
- 1 romaine lettuce, chopped

Preparation:

1. Seasoning the salmon with salt and pepper and bake at 400 degrees for 15 minutes, cut into big chunks and set aside.
2. Combine all ingredients together in a bowl, except avocados and lettuce.
3. Add avocados into salsa, toss well.
4. Place the tortillas on the plate, arrange some lettuce on top. Divide the salmon among the tortillas, then top with avocado salsa.

K Thip, the tacos look so yummy (just had some for dinner last night). The salsa looks delish as well, so refreshing.
