pumpkin whoopie pies...

I heard about whoopie pies long time ago, but I had no idea what they looked like and tasted like. So I did a search on the web and found that whoopie pies were more like a cake than a pie or a cookie.

Yesterday, I was planning to make some desserts with pumpkin for Halloween and Thanksgiving, whoopie pies came to my mind. The original whoopie pie is chocolate, but pumpkin and red velvet are more trendy.

makes 6

- 1 cup all-purpose flour
- 1/3 tsp. salt
- 1/3 tsp. baking powder
- 1/3 tsp. baking soda
- 1 tbsp. pumpkin spice
- 1 egg
- 1/3 tsp. vanilla extract
- 2/3 cup light brown sugar
- 1/3 cup vegetable oil
- 1 cup pumpkin puree


1. Sift all dry ingredients together in a bowl, set aside.
2. Whisk all wet ingredients together in a bowl, then whisk in the dry ingredients.
3. Using a small ice cream scoop, drop heaping tablespoons of mixture onto prepared baking sheet, about 1 inch apart.
4. Bake @ 350 degrees for 10-12 minutes or until a toothpick inserted into the center comes out clean.
5. Let cool completely.
