Thai mango salad...

Whenever I think about healthy and low in calories food, this mango salad comes to my mind. In terms of ingredients, anyone can pretty much makes it.  This salad tastes great on its own, but you can serve it with deep fried shrimp or fish. The sweet, sour and spicy flavor pairs perfectly with seafood. For this recipe, I use ripe mango as it's sweeter than the unripe one. I like to prepare the mango and make the dressing aheadime of t and keep them separately in the fridge. Then just toss them right before serving.


- 1 mango, shredded
- 1 shallot, sliced
- 1 green onion, sliced
- 1 bird's eye chili, chopped
- 1 tbsp dried shrimp
- 1/4 cup roasted cashews
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 1-2 tbsp lime juice


1. Mix all ingredients together in a bowl, except mango and cashews.
2. Toss the mango and cashews with the dressing.
3. Serve.
