strawberry...

basil and pink peppercorn...



Come celebrate Valentine's Day with us at Luce!

Ingredients:
makes 10

for pink peppercorn meringue nest
- 4 egg whites, room temperature
- 1/4 tsp salt
- 1 cup sugar
- 2 tbsp corn starch
- 1 tbsp grind pink peppercorn
- pinch of red food coloring

for strawberry
- 2 lb fresh strawberries, cut in half
- 2 tbsp sugar
- 1 tsp balsamic vinegar

for basil sauce
- 1/2 cup basil leaves
- 1/4 cup simple syrup
- 1/2 cup corn syrup

Preparations:

for pink peppercorn meringue nest
1. Mix sugar and corn starch together.
2. Whip egg whites to soft peaks, gradually add sugar mixture and whip to stiff peaks.
3. Add food coloring, continue whipping for 30 seconds.
4. Fold in pink peppercorn.
5. Pipe into 3" circles, bake at 200F for 1.5 hrs.

for strawberry
1. Mix all ingredients together in a bowl.

for basil syrup

1. Blanch the leaves.
2. Blend all ingredients together with hand blender.
