Ingredients:
2 servings

- 2 potatoes, cut into 1/4" thick
- 2 tbsp. olive oil
- 1 clove garlic, minced
- 1/2 red onion, chopped
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 2 tbsp. bacon, crumbled
- 1 tbsp. thyme leaves
- 1 tbsp. red wine vinegar

Preparation:

1.  Heat oil in skillet, saute garlic and onion over medium heat until translucent.
2. Add potatoes, salt and pepper Cook until potatoes are lightly brown, about 10 minutes.
3. Add bacon, thyme and vinegar. Turn occasionally. Cook for 5 more minutes.
4. Serve hot.

No need to use, but I just want to deglazing the pan. :)
