chips & salsa...

demo and macaron tower...

Last week I got into the mood where I wanted to prepare Mexican dishes to share with my friends who came to my macaron demonstration. So I made mango salsa and guacamole to go with the cactus chips. Eating chips and salsa always felt comforting, full of flavor and filling on the stomach at the time. Mango salsa with fresh diced mango, onion, jalapeno, cilantro and lime is my favorite. For the guacamole, I went with the classic recipe made with avocados, onion, Serrano chili, cilantro, lime and cumin.

- 4 ripe California avocados, seeded and peeled
- 1 lime juice
- 1/2 white onion, finely chopped
- 1 Serrano chili, seeded and finely chopped
- 1 garlic clove, minced
- 1 tbsp. cilantro, finely chopped
- 1/4 tsp. ground cumin
- 1/2 tsp. salt

1. Using a fork, mash avocados coarse with lime juice.
2. Stir in the rest.

Where did you get this macaron tower? I am having macarons at my wedding and I think this would be stunning for the dessert table.

I LOVE LOVE Cactus, but Where...How...Who makes Cactus Chips?? If you have a recipe, please share!
