baking is an art form...


Spiced Plum Galette

for the shortcrust
- 1 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1/2 tsp. salt
- 1/2 cup unsalted butter, cut into small cubes
- 1/4 cup cold milk
- 1 yolk

for the plum
- 6 plum, sliced
- 1 cup light brown sugar
- 1/4 tsp. ground cardamom
- 1/2 tsp. ground cinnamon
- 1 tbsp. all-purpose flour
- 1 lemon juice and zest


Preparations:

for the shortcrust
1. Put the flour, sugar, salt and butter in the food processor. Pulse until the mixture resembles coarse crumbs.
2. Mix milk and yolk together. With the machine running, gradually add the milk mixture until the dough comes together.
3. Wrap the dough with plastic wrap, and chill for 15 minutes.

for the plum
1. Toss all ingredients together in a bowl.

Assembly

1. Roll out the dough to 10-inch round. Place on a baking pan lined with parchment paper. Arrange plum on the dough, leaving 1-inch of dough left outside. Fold the edges of the dough over the plum. Chill for 15 minutes.
2. Brush the edges lightly with egg wash, sprinkle with sugar.
3. Bake at 375F for 30 minutes or until the crust is golden brown.

Thip this looks yummy not to mention a work of art. I am going to try your shortcrust recipe. A few months ago I tried one that I didn't like. And I know your recipes come out well : )
