edamame hummus...



Hummus wasn't my favorite thing to eat until I tried edamame hummus that my neighbor served at his party. It was AMAZING!!! So I made it for my holiday party last weekend, it was a hit. I really love the grainy and nutty taste of edamame hummus. It goes well with breads, crackers and raw veggies. From now on, this hummus is going to be my favorite appetizer to serve at the party instead of the cheese plate.  =)

Ingredients:

- 1 lb frozen edamame
- 1/2 cup tahini
- 1/2 cup sesame seeds
- 2 cloves garlic
- 1 1/2 tsp. sea salt
- 1/8 tsp. black pepper
- 1 tsp. ground cumin
- 1/2 tsp. ground coriander
- 2 tbsp. cilantro, chopped
- 1 lemon zest
- 6 tpsp. lemon juice
- 1/4 cup water
- 1/2 cup extra virgin olive oil

Preparation:

1. Microwave edamame for 2 minutes.
2. Combine everything in food processor, except olive oil. Process until smooth. 
3. With the machine running, drizzle in olive oil and mix until fully incorporated.
